Add our onions to your Toad in the Hole batter to make the most of you Christmas leftovers
1. Preheat the oven to 220C/200C fan/gas 7 and grease a large six-hole muffin or tart tray with oil. Place the tray in the oven to warm.
2. In a large bowl, whisk together the milk, egg, flour and bicarbonate of soda, until you have a smooth batter, then mix in the onion slices. Take the tray out of the oven, divide the batter between the holes and pop two of the pigs in blankets into each.
3. Bake for 12-15 mins, until risen and golden. Transfer to serving plates and serve with broccoli.
